~smile~ ... that menu looks amazing ... what is the dessert? ... Looks ultra yummy. I think I am going to thoroughly enjoy that rice and fish dish ... and the olives ... Thank You Belita and well done to the others!!
ReplyDeleteLynne, the dessert is called 'trouxas', in Portuguese, meaning 'bundles'. They are made with sugar and egg yolks only, wisely and always cooked with patience and slowly. No one knows their origin but it is known that by the end of the nineteenth century a Portuguese writer praised this delicate sweet. That rice and fish dish is a bit heavy and if I have it I can't eat anything else but fruit only.

ReplyDeleteJust what I needed ! Thank you, Belita. My turn to cook our friendly dinner in first week March. My theme last time was Italian, this time I chose Portuguese as I have got a promise of Kenneth's girlfriend Meghan, who is a newly baked junior chef and from Portuguese descent, her surname is de Silva. She has promised to help me and I have been trawling Portuguese Restaurant sites here for a menu. Yummy !
DESSERT RECIPE
DeleteINGREDIENTS:
1.0 KG OF SUGAR, 500 ml of water, 12 egg yolks, 1 egg white
METHOD
1.In a saucepan, dissolve the sugar in the water until you can make a path through with a spoon.
2.Mix in the egg yolks to which the egg white has been added.
3.When the yolks begin to set, spread out on a work surface and let cool;
4.Cut into 6 cm squares and roll.
